Garlic Chicken kebabs.

Every now and then we enjoy making these kebabs as another family favourite. We serve these kebabs with finely sliced red onion, tomatoes and lettuce.

A garlic mayo and sweet chilli sauce really make these simple kebabs a perfect meal. These are so versatile that they can be cooked either on the BBQ or on rainy day they work just as well being cooked on the hob.

 

What you will need.

  • 4 large chicken breasts
  • 2 cloves garlic
  • Olive oil
  • 1 Lemon
  • Salt
  • Pepper
  • 3 teaspoons Rosemary – (Dried is fine)

Preparation.

Dice the chicken into 2 cm cubes. You can make these bigger if you want to skewer the chicken for cooking on the BBQ.

In a bowl, Crush the garlic, juice the lemon and add some of the zest. Chop the rosemary quite fine – or if you have dried just add straight in, salt and pepper. Then toss in the chicken cubes and allow to marinade for at least 1 hour.

When its time to cook, heat a saucepan (dry) and add the entire mix and cook until the chicken is golden. If your are cooking on a BBQ –skewer the chicken until each kebab is about 4 inches long.

Serve in pitta bread, with garlic mayo, sweet chili sauce and salad.
