Chicken chorizo casserole

You cant really go wrong with a casserole can you ? but casseroles from my youth were wet flavourless and frankly awful. I went off of them for a very long time.

You also cannot go wrong with a slow cooker. We have owned four of them now. Each of them were used for about a month then consigned to the loft, then the bin. But strangely this cooker has made it almost to a year of constant use. Ironically it was purchased for the caravan, yet has only made it to the caravan once!

Ok so here is the recipe for four hungry people.

  • 3 chicken breasts – diced.
  • 1 chorizo sausage – the pre-cooked variety.
  • 1 can of butter beans – in water
  • 2 teaspoons smoked paprika
  • 1 clove garlic
  • ½ pint chicken stock
  • 1 glass wine
  • 3 peppers (Orange / yellow or red)
  • 250g new potatoes.

Start by browning the chicken, we are not trying to cook the meat, but give it some colour & flavour. Slice the Chorizo into chunks (remove the paper wrapper !)  and add to the chicken. Allow the chorizo to release its flavour and colour.  Once a healthy orange colour is coating the chicken add the garlic, peppers, beans, add the sliced new potatoes and sprinkle the paprika to the mix. Transfer to the slow cooker and add the liquids.

Cook on low for around 4 or 5 hours. Just enough time to enjoy a long walk, a good film or a few chapters in your current book.

We serve this with either some crusty bread or to make this a really special meal, stir in some soured crème just before serving and dish up with some wild rice & broccoli.
